Certainly an interesting read, Kathryn! I had intestinal problems for many years, no doctor could find what the problem was, until I stopped eating wheat and all my problems disappeared! It is not an easy diet, but I am so glad I feel so much better! So not about painting, but thanks for sharing!
About ten years back, I had to see a nutritional expert for my eczema. He told me to stop wheat completely, which I did. The eczema cleared up. Then one day I got a farmer for a patient and I was telling him of my experience. He wasn't surprised because he said on the day before they harvest, they suit up like spacemen and spray the crops with very strong chemicals to kill the weeds and bugs. That's the day before harvest. Time enough to leave the wheat? Maybe not. I told the nutritionist and he found that interesting, so decided I should try organic wheat. That has never caused a reaction. I'm only one, not a scientific study, but would love to see a proper study carried out on sprayed wheat vs organic.

Very interesting read. It is something that I have watched closely in my diet as well, and although I eat wheat I do try to limit my amount.
